    Pork Kidneys

    12 lb pork kidneys
    10 tbsp flour
    3/4 lb butter
    7 pt bouillon
    10 tbsp vinegar
    Pinch of sugar
    Salt and pepper

    Cut the kidneys crosswise into 1/4 in slices, fry in hot butter 1 min. Season, stir in flour, cook 1 min then pour in bouillon and vinegar and cook a few minutes over high heat. Kidneys are tender when no longer red. Do not cook too long or they will get hard. Serve immediately.

    My wife has made them in some dishes, but not as a piece of meat like a port chop or slice of liver. Just chopped in pieces.
    A) I don't like the taste. So a hard no.
    B) One pork kidney has about 250% of the recommended daily value for cholesterol. It's just not good for you more than once in a blue moon. Makes it a soft no, though the taste makes it a hard no.

    I might try that scaled down to something less than 12lbs of kidney. As my Welsh grandmother used to say, the only part of a pig you can't eat is the squeal. I do draw the line at lungs tho. Filthy things lol...
