I've never seen one cleaned like this but can't see how it wouldn't work for a rabbit or woodchuck as long as you didn't care about the front or want to do that separate if you hit it with a shotgun and have to throw it out.

That's right up there with eating rats, dogs, and cats.
So far, I've never been that hungry.

My parents and grandparents lived through the Depression. Even when food was short, they said skunks, possums, armadillo - and nutria - were not welcome at the table. Rabbits, squirrels, and raccoons were generally available and acceptable for a meal, but the others were off the menu. They were fortunate that they lived on a river and could also fish - but my grandfather said deer were almost hunted out of existence in the area. Lots of chickens magically disappeared, too.
That boy don't know nothing ... He Cooyon...
There is a $6.00 cash money bounty paid on each tail ... you put dat tail in the freezer bag and save them up and collect your bounty next time you go to Wildlife and Fisheries to get your hunting / fishing permits .
He didn't skin it for the pelt ... he skinned it for eating ... the way he did it was how my daddy taught us to skin rabbits and squirrels ... not a bad way to do it .
Nutria aren't rodents but the ratty tail gives them the "look" ... the meat is clean and the nutria is vegitarian ... the meat reminds me of swamp rabbit ... not bad eating .
At one time a prime Nutria pelt was worth a few dollars but the fur market has tanked ... a pelt may get $2.00 but the bounty $6.00 for the tail ...helps keep trappers and hunters interested in "taking" them ... they aren't native and do a lot of damage burrowing into leevee's and canal banks ... at least they are good to eat if you can get over their looks !
And , there is no limit on them and the season is "anytime" !

Nothing wrong with eating wild meat in my book.
I liked how he baked it first, added water after 10 minutes so the meat cooks slower and wet which makes it tender.
Debone, then a quick saute and sauce. Nothing wrong with that in my book.
I've eaten and enjoyed beaver, coon, snapping turtle, rabbit, squirrel (all 3 variety's, love big fox squirrels)

I truly believe we need to get back to basics.

Get back to the land.
Get back to thinking like our forefathers thought.

They were trying to get the public in New Orleans to eat nutria around the year 2000 and had a chef cook some during the morning news show.
The female newscaster took a bite and said that it was good but the look on her face told a different story!
I laughed so hard I was crying!

Well that was interesting! I enjoy rabbit and have eaten beaver a few times, but don’t know about that. I would like to have it prepared for me the first time I taste it.
I have eaten it a few times. It is better than chicken.
There is no difference between communism and socialism, except in the means of achieving the same ultimate end: communism proposes to enslave men by force, socialism—by vote. It is merely the difference between murder and suicide. Ayn Rand
