Micah 6:8
He hath shewed thee, O man, what is good; and what doth the LORD require of thee, but to do justly, and to love mercy, and to walk humbly with thy God?

That look on your face, when you shift into 6th gear, but it's not there.
Used to get Bufalo brand sauce for oh so cheap and it was oh so good.
Nowadays I buy powdered chilis like this stuff to supplement what we grow.

Chipotle tobacco for sprinkling on stuff. Tough to beat smoked jalapeños.
My home made mango habanero for wings.

Tabasco buffalo style is my current.
I am glad I looked into this thread Tabasco and some other hot sauces with to much vinegar have been causing me issues for the last few years . El Yucateco is one that does not bother me I really liked the black label smoked flavor but have not seen it in a while .
When I think back on all the **** I learned in high school it's a wonder I can think at all ! And then my lack of education hasn't hurt me none I can read the writing on the wall.
Ever hear of The Pepper Palace? Fantastic stuff, lots of variety! I have spent a lot of money there.

Crystal and texas Pete's.
I did make a homemade jalapeño hotsause that turned out real nice as well. When you cook it on the stove it will cure every clogged sinus in the house.

While I have made a number of batches of fermented hot sauces from scratch, lately I have been making more of a "semi homemade" type. I take a habanero, seed it, add it to a cup of Crystal hot sauce then puree everything with a hand blender. This kicks up the heat a lot and while we use regular Crystal sauce too the souped up version seems to go away faster.
My inspiration came when I got a smaller bottle of Crystal extra hot that we also liked. But when it was empty and I already had a quart of the regular and a habanero in the fridge and we have been doing this since.
Been using Cholula lately. Not really hot, but I like the flavor. Also, I feel it needs to be said...

Crystal on the table
Tabasco for cooking and bloody marys.
Getting used to Valentina Black. Too cheap to pass up. A liter sells for what a large bottle of tabasco sells for.

I been drinking Tabasco since about 1965...even overseas 66-69 I had my mom keep me supplied...sharing with my mates at mess the bottle usually got back empty. Now with that said, I'm always buying something new..but, always come back to my little friend.
PS Texas Pete is great on pig skins.
“You should tell someone what you know. There should be a history, so that men can learn from it.
He smiled. “Men do not learn from history. Each generation believes itself brighter than the last, each believes it can survive the mistakes of the older ones. Each discovers each old thing and they throw up their hands and say ‘See! Look what I have found! Look upon what I know!’ And each believes it is something new.

Maya Ik. Not easy to find. I first discovered it in a grocery in South Houston that catered to Hondurans (they said). Smoky, not all that hot. Found it again in Ann Arbor, but I don't live there anymore, so I have to get it onlne.
Other favorite is a chinese hot oil, but the really good brand is Kadoya, (Japanese). Use sparingly.

Tabasco. Made the "C"s and MREs edible. And old habits are hard to brake.
It ain't rocket science, it's boolit science.
