I do like the feel of Hogues but looks is another ball of wax.
I generally like the old double diamond grips out of some hard wood. The Commander sized 1911's have LOK palm swell grips for a bit better hand fill/grip. The black grips aren't rubber but ebony in the double diamond pattern. Some are by Houge or Chip McCormack possibly a few of others. Pretty much everyone who makes wooden grips offers this pattern.

I originally used LOK grips on the CZ 75/85 pistols. They make a checkered palm swell grip that's has a really nice feel in my hand. Figured I would try a pair of their somewhat new 1911 palm swell grips on my Kimber Commander size 1911. So ordered a set of blue/black with red liners. Like OS OK I enjoyed them enough a second set was ordered for the round butted Commander.
I have the Hogue rubber panel grips on all my 1911's that are intended for serious use. Not the wrap around ones. They aren't pretty, they are inexpensive and provide the best grip of any I have tried. After about 400K rounds of 45 ACP through them, I haven't seen a reason to change unless I wanted pretty ones for a Sunday Go To Meeting gun.
My first 1911 had a nice set of rosewood grips. They really looked nice. Then I found Longmire on the rerun channel and decided I needed a set of stag grips. I found a set online that looked perfect. They are a bit thicker and fit my hand much better. It’s a Para Ordnance single stack. The rosewood grips went on a very smooth Norinco that I’ve had almost as long. My next favorite would be some of the various bone styles. Maybe I need another 1911?
I got my first set of wood grips from Esmeralda about a year ago - and based solely on pictures from her website. I was impressed enough to buy another set a few months later and recently purchased a 3rd. All have been superb quality, fit and finish. My .02.

It's hard to mention anything about our 'Beloved 1911's' without mentioning John M. Browning...right?

Stag for dress up but checkered double diamonds for work.
I like either checkered walnut or VZ G10 for carry. For BBQ guns, either High Figure Grips checkered desert ironwood, or Scott Kolar's mammoth ivory, depending on how wealthy I am feeling.
