I hated it as a child, but that was mostly due to my mom ruining it by putting mustard on it. Mustard and liverwurst DO NOT go together and produce a good flavor for me. I'm in ketosis and am always on the lookout for things I can eat and stay in ketosis. I remembered liverwurst the other day, and I have been eating. But is it safe for me? Is it low in carbs? Internet to the rescue. Not only is it safe but it's got HUGE nutritional value.
I just got done eating a liver and onion sandwich, minus the bread and thought I'd post about liverwurst. When I can get it I prefer Braunschweiger Liverwurst. That just means it has onions added.
I also like fried onions and liver, but the wife hates the smell.
At the link there is all (maybe more) that you wanted to know about liverwurst, but cursor down and there is an idea for fried onions and liverwurst that I intend to try. One nice thing about using liverwurst, there's no problem with getting tough pieces in the liver (actually veins) since the liver is fine ground.
