You might consider using zinc for your cannon. Balls will weigh about what an iron ball would and it won't beat your barrel like iron. Also people collecting WW s need a place to dispose of the zinc.

Contact the seller about shrinkage. They should have a pretty good idea and it might be a little different with the big balls than with normal sized bullets.
I've seen charts or formula for different alloys but can't recall where.
IS there a legal size restriction for cannon bores of .650 or something along that line?
