    Directions
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
    3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
    4. Bake at 350 degrees F (175 degrees C) for 1 hour.

The recipe name caught my attention and I decided to give it a try. Turned out really well and all plates were clean at the end of dinner.

The best meatloaf recipe on earth:

Bacon Mushroom and PepperJack Meat Loaf

    1 lb Lean ground beef

    1 lb Lean ground pork

    1 sm Onion; finely chopped

1 can (4.25oz) finely chopped black olives

    1 Egg

1/2 c bread crumbs (or Panko crumbs)

    1/4 c Evaporated milk

8 oz Grated smoked pepperjack cheese

1 cn (4 oz) Button mushrooms; drained

1 c sweet baby bell peppers, finely chopped

    1 pk (12 oz) bacon

In a large bowl add all ingredients but cheese and bacon. Cook and crumble the bacon, drain well and divide in half, placing 1/2 in meat mixture. Add all but 1/2 cup of the shredded smoked cheese to meat mixture. Blend well and place in perforated loaf pan. Or foil pan (removing from pan after 1 hour). Top with cooked crumbled bacon. Smoke at 225* until internal temp is 160*, then top with the rest of the pepperJack (at around the 3 hour mark). Return to smoker and up the temperature to 250*.

    Smoke at 250* until 165* internal temp - around 3 1/2 hours

6 cups Italian seasoned bread crumbs from progresso
    4 eggs
    1 cup milk
1 small can mushroom pcs drained
    3 cloves garlic diced
    1 stalk celery diced
    2 small carrots grated
1 med onion diced -( yellow is what I had so little hot, I prefer red)

    2 tablespoon lea & perrins
1/3 cup ketsup (all I had)
    1 tablespoon lemon pepper
    2 green onions chopped
    1 stalk thyme
    2 stalks cilantro

mix and then split into 3rds and pat into loafs and make sure the mushroom pcs are on the inside
of the loaf and put on rack in sheet pan - run a bead of ketsup along the top
cooking until it hits 160 inside.

tuned out pretty gosh darn good

Big blowtorch, hard to keep lit though... On the smoker in the back yard. 225F until internal temp is 160F. I like Hickory wood for it.

For the "meat" I prefer one part ground lamb, one part ground beef, and one part by volume cooked rice.

My meatloaf base is 2 pounds ground beef, 2 eggs, heaping cup of oatmeal ground to a flour, S&P. From there add whatever you like, bacon, cheese, mushrooms, olives, pepperoni, top with pizza sauce or ketchup or BBQ sauce depending on what I stuff it with. Flatten out the ground meat mix into a rectangle, spread stuffing on top, then roll up. Leave space on the edges to seal it. Cook in the oven or on the smoker.

2lb venison burger with about 10 percent beef fat
    a good squirt of mustard
    one good sized onion chopped
    Good squirt of barbque sause
1/2 teespon of montreal steak sesoning
    1/2 lb bacon
    1 cup of pepperjack cheese
1 cup bread crumbs or oat meal
    2 eggs

combine everything but the cheese and bacon and mix well
Lay out a piece of wax paper
spread out the meat mixture on the wax paper in a rectangular shape
Add all but maybe 3 slices of the bacon to the center of your meat (crumbled)
    add cheese to the center
roll up the meat into a loaf with the meat and cheese in the middle
add the 3 slices of bacon to the top and put ketsup or barbaque sause on top.

Ever see the Cheech and Chong album that looks like a pack of rolling papers? It comes with a couple, but they are getting hard to find.

The great thing about meatloaf is the endless variations. About the only thing that ruins it is over cooking.
