Tapatio is my favorite on eggs. Don't like the vinegar taste of some of the others.
Crystal for Red beans & Rice and stirfried stuff, Yucateco red habanero for tacos..Tabasco is too vinegary for me. I am looking for a reasonable source for canned Jalapa peppers...

I've been using Louisiana hot sauce lately.
My wife used to always say "aren't you going to taste that before seasoning it?" but she's kinda getting used to me now. Only took 26 years.....

Yucatan Sunshine Habanero Pepper Sauce is the last I bought. It has habanero flavor, but is not very hot. Yummy.
Dave's Insanity, Blair's Sudden Death, Tapatio, Cholula, El Yucateco are all great. Bee Sting honey & habanero is another good one.
Felix is right. I had a pretty good collection on a dedicated shelf at one time, but I have lost track on that. Firehouse Subs has (had) a pretty good variety. The last few times I have been to one, most of the bottles were empty.
There used to be a site called pyropepper.com where you could mix and match different bottles to get enough to get a good deal on shipping. I just looked for it, and it appears to be gone.

Last year a buddy had a surplus of habaneros. I put some of those up, too.

I also have several jugs of my own blend based on several varieties of peppers from the garden and greenhouse. Adding mango and kiwi makes a real nice sauce.

And I think the good 'ole Frank's (of course) Tobasco, Louisiana, are all good , too. That goes without saying.
My interest in hot sauce variety was piqued after running across a shop on the River Walk in San Antonio that had quite a selection.

only place I have found it is in FL Tarpon springs but will send a case in mail YOU need a case if your friends try it

I had a friend from texas and his wife was true Tex-Mex decent. I gave them a bag of assorted hot peppers from the garden and a couple weeks later she gave me a pint of the best hot sauce i had ever eat! Not sure how she made it but it was blended not just the peppers in vinegar and had a good red color like tabasco or franks but was more of a course texture. Good stuff, best I ever had, then they moved away!
So for now I settle for Franks or Tabasco.

Melinda's XXX is my favorite. It's a habanero sauce with a bit of heat but still plenty of flavor. For everyday use, the original Tabasco gets the call.
I'll never understand the pepper extract sauces like Dave's Insanity... half a second of dirt taste followed by pain. Pepper extract is for mailmen to spray on rabid dogs.
For sauce that is in a bottle I prefer YUCATAN sunshine which is a Habanero pepper sauce first and then PANOLA Jalapeno sauce second.
Now if we are talking salsa then it is Clint's Texas Salsa. The Hot kind....It is made in San Antonio and is a real Texas Salsa with tomatoes, onions, and serrano peppers plus other goodies.....Wes
