Yes, shot at one 40 years old with it sitting on a Mulberry limb. I misjudged the distance with Grandpa's ol 222 and grazed the bottom of said branch. That g-hog lived for another day.
Can't count how many chucks I killed off fenceposts and large rocks both; they climb well.
I've only tried to eat one. It was head shot with a 30-30 so the body wasn't messed up. Normally I'm shooting them with 22 CHeetah, 220 Swift or 22-250 so what's left isn't that appealing for a meal.
The leaves may also be edible raw, but sure some can be cooked and eaten by people. The leaves do contain a milky sap that may not be good for you raw. Young leaves are best and some trees are better than others. So maybe a woodchuck can eat the leaves. They are squirrels and so may eat just about anything that comes from a plant.

Rodents climb trees...Rats, Squirrels...and Groundhogs. Personally, I'd rather find them in a tree...when you shoot them they generally die before they can get to their hole...so you can retrieve them.
Young groundhogs...they are pretty tasty...the older ones....hmmmmm...they are greasy and a whole lot tougher to chew....even after a good salt water soak and a few whacks with a tenderizing mallet they just aren't the same as the young ones.

First on I killed was in a dogwood tree. I saw one go straight up a tree about 10 in. in diameter. Of course he had plenty of incentive, dog was close behind.

Drove up to a work on a house and a Jack Russel had one treed in a peach tree.
My shooting berm has a female groundhog that's provided me with plenty of targets. The neighbors berm is 600 yards away that has a male. Mister Groundhog goes to visit Miss Groundhog in the spring when the beans are just up. He stays for a few days so when I'd get home I'd glass for him from the field gate 200 yards away. I saw him and he cut into the tree line. He got to a sweet gum tree with a double trunk and climbed up between the 2. He straightened his legs on one with his back against the other, turned his head 90 degrees and looked directly at me. Didn't have the gun with me and I never saw him again. He was 3-3.5' up.
