Thread: I need a new hot sauce!

    Last I bought was a quart of Carolina Reaper hot sauce from some Mossy Head area ladies, over at the farmers market. Pretty tasty, but all gone now.

    My standard carry is air dried Thai bird peppers, that I grow, ground in a coffee grinder, I carry a full pill bottle in my pocket. I add the powder to anything to get it right. Not good for the uninitiated so If someone wants some, I recommend only a tea spoon handle tip as a dipper for a large serving bowl. No games with hot.

    I worked with a couple of Hmong women for a few years. One brought in some of her home made sauce on occasion for dipping her lunch in. Sounded like it was an every meal type of sauce. She offered some and I accepted. Took several minutes to stop coughing and eyes watering. She just laughed. Tried a much smaller amount a couple of weeks later - same effect. She never did say what peppers she grew to make it out of.

    My dad used to make chili pequin sauce. He would rinse out old Tabasco bottles and pack with crushed bird peppers to about half full, then fill to the top with vinegar and salt. Always kept it in his lunch box at work.

    I like to dehydrate chili pequins then run them through a spice mill. I store the resulting powder in a Tupperware shaker and use it like red pepper flakes.

    As a Yankee I grew up thinking that ketchup was spicy
    but I vote for Cholula, on authentic Mexican simple food.

    Don't laugh at this. I have found and love Huey Fong Sambal Oelek Chili Paste as a great flavorful and hot hot sauce. Use it now on all my Mexican food.

    i keep a bottle of franks at work, i like sambla olek as well for some things every year or two i make a tobasco sauce but much hotter than the one you buy. I also use a blair's ultra death when i want to turn things up a notch.

    I despise strong vinegar so Diablo from Taco Bell does it for...It's about the only thing at Taco Bell that's actually 'Good' and doesn't give you the tourista dehli belly.

    McIlhenny tabasco on my collards. Tapatio on a really thick steak or pork chop. Tastes like it's got a hint of BBQ sauce in it. Texas Pete on everything else. From my sausage, egg and cheese biscuit in the morning to my buttermilk soaked cornbread pone in the evening. Sometimes sneak some on my blackberry cobbler. When I eat at Bojangles my dessert is 2 patties of butter and a pack of Texas Pete on the biscuit. Mmmm. I know where I'm eating tonight.

    Chipotle Cholula hot sauce is my new bbq sauce substitute. Significantly less sugar and carbs!

    I take fresh jalapenos out of the garden, roast them on the Weber unti black. Let them cool and remove seeds and stems, but leave the blackened skin. Toss them in a food processor with salt, sugar, and apple cider vinegar. For a pound of pepper mush, I use 4 tsp sugar, 3 tsp salt, and two cups vinegar. My wife water-baths it in half-pints.
