    Salt/Sodium free chili recipes wanted!!

    My mom has been put on a salt free diet. We are having our big family dinner at my house this Christmas, and have decided on a chili bar for the meal. I have beef, chicken, pork, and venison (both deer and elk) for the meats. I'm pretty sure I can get around the salt/sodium free requirement by soaking and preparing my own various beans and tomatoes, but I'm not sure how to get the flavors in without using salt.
    And before we get into that argument, I'll consider both with and without beans.

    Even if you get the grocery store box of chili fixn', like Carrol Shelby's, or 2 Alarm, the salt is always in a separate package.

    As far as the beans go, check out the other thread here about chili.

    Want beans soak pintos overnight then simmer until tender. Serve on the side. No need to add salt, in fact it can make for tough bean skin!

    Salt substitutes (Potassium Chloride) if there's no medical reasons to avoid potassium.

    You will be surprised how little salt you actually need for anything. I grew up not having salt in cooking as my Mom had issues with it. My GF is finding out you don't need to add salt(or very little) as the flavors are just fine. Good luck and I wouldn't add any. As others said, it can always be added latter by whomever is eating.
