    My Mom was afraid of fat thanks to the bad science of the middle and late 20th century, so we never did that growing up. When I went keto, I started keeping bacon grease and have had some in the fridge every since. It's like cooking with real cream, it's just better and I'm not going back.

    Tastes great, and I will come to using bacon grease as a mayonnaise substitute on occasion.

    These days I have to choose more hart healthy oils. However when I make chili, I fry up some bacon and then caramelize the onions in the bacon grease. Later on I chop up the bacon and add it in the chili. It just makes it better and it's not obvious why...

    Grandma's old metal Crisco or coffee can on the stove is OK----- unless you can do better:

    I got this for my birthday a few years ago,
    I haven't measured it, but I think it holds about 2 quarts, maybe a little more.
