    Venison Ribs

    I have venison ribs in the Crock Pot.
    I will cook them there for 4-5 hours.
    They will then come out, get covered with rub and go on the pellet grill to smoke for 3 hrs.
    Then they will be smothered with BBQ sauce, covered in aluminum foil and cooked for another 1/2 hour.
    Some good eats .

    I like to use a similar recipe for venison neck roast.

    It is better to smoke 3 hours then move to the Crock Pot... once meat passes 145f temperature it doesn't take up much smoke. I have done that with spare ribs when pressed for time. 1 1/2 hours under heavy smoke then finish in a 275 oven while I do other things.

    In my area they are well marbled and covered with 1" + of fat. I generally pass on them.

    what kind of venison are y'all eating? The whitetails around here don't have enough on their ribs to fool with

    MN corn fed whitetail... FAT! And big! Bucks average 150+++pounds, record is 402 pounds dressed. Group I hunted with had a 223 pound doe one year...
