    Smoked!

    --Last Thursday I got the Grand Kids ( & they are Grand indeed, couldn't be prouder of them) to go along with a wild game night. They wanted it at their house so they could put the 6-mo old to bed at an early time. So I cranked up the smoker & put on Beaver, A Large Raccoon, Spicey Cajun Sausage, & Hamburgers. Sides were Butternut squash, Home canned green beans, Broccoli Casserole, & Southern Seasoned Brussel Sprouts. Well the hamburgers & sausage went untouched The Raccoon was demolished & the Beaver was little to none left. My grandson's wife went wild over the raccoon. Now it's a long wait til next Coon season & they want more. They were surprised at themselves for liking it so well. Boy this really makes us look hillbilly! -06

    I never had racoon that I liked but I only have tried it a couple of times and that was long ago. Like most things probably depends on how it's handled and prepared. Sounds like you've got it figured out.

    Ive lost 3 chickens lately to coons... this mean they would taste like chicken?

    What type of wood compliments coon?

    When I went to visit my 13 cousins, there was no telling what would be on the table. You just watched a short time and took some of what was shrinking fast in the bowls on the table. With 13 kids my aunt and uncle kept everyone well fed. You just did not ask, made everything more palatable.

    I grew up with 3 brothers and sisters spread across 8 years. Dinner or supper was what was on the table. You either ate it, or made do without. Complaining was not an option.
    Dad Jamison ran the dinning room table with an iron hand, mostly hidden in a velvet glove. Bread, toast, jam were always available.

    I can remember a few nights when the main course was liver and onions that I filled up on taters and toast.

    Dinner main course could be beef, pork, chicken, fish, wild game, pidgon and snapping turtle.

    Mom always said you catch it and clean it and I'll cook it.
    I truly believe we need to get back to basics.

    Get right with the Lord.
    Get back to the land.
    Get back to thinking like our forefathers thought.

    Visiting mountain villages for the last 37 years I learned whatever died or was captured was eaten. Cat is the only meal I would rather not have again. Dog rates right up at the top with burro. Scorpions ( a grey colored one) have no flavor at all. I pass on a large hairy spider. But all the rest is a tasty morsel.
    This is dry desert so there are no river types to be found. Rock marmots, rabbits (field raiders) and lizard tails are well eaten. No snakes here.

    ---I've grown to count on hickory for smoking, also use a little mesquite. I have made a lot of mistakes smoking in the years past. I had to learn to slow down, too much heat makes it too bitter to eat. 225 deg. seems to work well, 250 MAX temporarily. I don't feed any coons per say they are just wild mt. coons. The Beaver was a cutting a neighbors corn & damming with the stalks, He asked me to rid of them & I did. -06

    I just cut and split a huge cherry tree, looking forward to trying it in the smoking mix. ive been putting up beech, maple, red and white oak and lots of hickory. I have yet to see any sign of raccoon around my place but there are rabbits, turkey, woodchucks, coyote, bobcat, black bear and deer.

    Someday I'd like to try bobcat. Not sure why exactly, just to say I have I suppose.

    --farmbif; It seems raccoons prefer the dark, but you can call them out with an e-caller during the day. I rarely see one much after sun up.

    Family lore includes a story of a 60 lb raccoon that fed a crowd. Just thinking today that I have never tried coon or possum.

    I loved to eat beaver in Alaskan. We would boil it. It seemed that beaver from lakes and ponds tasted better than those from rivers. Glad to hear people are enjoying it.

    My dad once told me that when he was a youngster on the farm in Oklahoma he came home one night famished, so he looked in the oven and found a nondescript animal which he tore off a leg and ate it. He found out in the morning that his mother had been rendering fat from a skunk to make some kind of linament.

    yep my dad cook a few skunks as well. never tried it myself.but coon makes a good meal we BBQ it on the grill Possum is a bit to greasy for me
