Thread: Eggnog bread

    Eggnog bread

    Found this and tried it.
    If you like pound cake, banana bread, coffee cake sort of things, you'll like this.
    I liked it, and will put it in the rotation with cinnamon rolls and cream cheese Danish.

    Mix in one bowl:
    1 1/2 cups all purpose flour
    1 cup white sugar
    1/2 tsp salt
    1 tsp baking powder
    1/2 tsp ground cinnamon
    1/4 tsp nutmeg (next time I'll use a little less)

    Mix in a 2nd bowl:
    3/4 cup eggnog
    1/2 cup veg. oil
    2 large eggs
    1/2 tsp rum extract (next time I'll use less of it too)

    Add liquids into dry ingredients bowl while mixing.
    Pour into small-ish loaf pan.
    Bake at 350 until knief poked in the middle comes out dry. About 55-60 minutes.

    This time of year one of my friends gets excited. Egg Nog is available. He makes Egg Nog pancakes. Pretty good, made them for my grand kids. Will look for recioe later if anyone interested GW

    I really like the stuff, and like mayonaise- there's recipes to make your own, but I never got around to trying it.

    Recipe sounds good, but I would add some real rum either before or after baking.

    Adding after baking. Alcohol would evaporate when baked unless you just want the flavor GW

    It's more fun not to tell people that alcohol boils off at 176 F.
    I let 'em think they'll get intoxicated from booze flavored deserts. (Most of which are baked at 350 F.)
