    why are carrots and peas such good friends

    yeah, I know. it sounds like the beginning of a good joke.
    well I cheated today and used a box of zatarains to make a pot of dirty rice. as Justin Wilson might have said, ooh eee that some more better.
    anyway I filled the pot with half a bag of carrots and half bag of frozen pees before adding the water. but sure enough carrots and peas sure do go together real good in dirty rice. with a splash of soy sauce on top. and dont forget the glass of wine

    They also work in Shepard's Pie and Pork Fried rice.

    ok its been decades since I had a quality Shepards pie, you got a recipe? we gave half the pot of dirty rice to the widow lady down the road after church. so there is plenty room in the fridge and we still got a couple pounds of fresh ground beef, a sack of taters, more bags of carrots and peas

    The only thing that goes in my Zatarain‘s dirty rice is hot sauce! I believe I’d stay away from Louisiana and Cajun country if I was you!

    Peas and carrots will keep you alive when nothing else is around. Taste will not matter a bit.

    1 pound Ground lamb
    1 yellow onion
    2 cloves garlic
    1 tablespoon tomato paste
    Flour
    Vegetable stock or water
    Frozen peas and carrots mix.
    2 pounds potatoes
    Cream
    Butter
    1 cup shredded cheddar
    1 egg yolk


    Peel and boil the taters. Mash with cream butter. Make them very smooth. Whip in the egg yolk and stir in the cheddar.

    Dice the onion. Mince the garlic. Put a bit of oil in an oven safe pan. Add the lamb. When the lamb has started to brown, add in the onion and garlic. Sweat the onion until translucent. Stir in the tomato paste. Add a couple tablespoons of flour. Incorporate well. Meat should be finely divided. No chunks. Add a cup or so of stock. Add frozen peas and carrots. Mix.

    Smooth surface of the meat mixture. Add the mashed on top by large spoon fulls. Smooth the taters to cover. Brush with melted butter. Bake in a 400 degree oven for 20 -30 minutes to get some color on the taters. Let rest a few minutes to make it easier to cut and serve.

    Same recipe works with ground beef and beef stock if you don’t like lamb.

    Yup, nothing like a good Shepherd's Pie! Your recipe is almost the same as my wife's, only difference is she uses mixed vegetables instead of peas and carrots. Mmmm, yum!

    Ground Beef? Who doesn't like lamb? It's one of the true delicacies in life, leg of lamb for Christmas this year!

    Lamb is great. Mutton is inedible. We raised 2 lambs in our dog pen several years ago. One was named Lunch and the other on was Dinner. They go from lamb to sheep at 1 year old.

    They were very good.

    I think they're a nice complement - you have earthy sweetness with the slightly bitter note from the peas. Much like mirepoix (onions, carrots and celery (I use leeks instead of celery most of the time, when I can get them reasonably) is foundational and good.

    Don't let any of them Cajuns see you do that.
    They've chopped down people's pecan tree for lesser things than contaminating dirty rice.
