    Butchers Delight

Picked these up at a yard sale all 3 for $5. They were dirty, rode hard, had years of crud stuck to the handles, Hi-Carbon had rust and knicks throughout the blade. They took to cleaning, I ran the worst blade on the burr king to remove the knicks. Removed the rust with wet and dry, treated the wood with beeswax and mineral oil mix, then hand sharpened each to shaving sharpness.

    Top to Bottom

    10" Forschner Breaker

11" Case Bros. Cut Co. Chrome Vanadium Steel

14" Clyde Cutlery High Carbon Butcher Knife. These were often used by the US Military, they were usually marked with the date from WWII to Vietnam era. This one has the logo barely visible and no date.

You just can't beat old carbon steel butcher knives - assuming they aren't worn out from use. I have several that my grandfather passed on to me - he was a butcher by trade in his younger years.

Great deal and a nice project to bring those knives back to usefulness.

Nice find! My favorite kitchen knives were both under $2.

    recent acquisitions

acquired these in past month at yard + estate sales - Case, Sabatier, IXL, Forchner, Dextor, Wustoff, + etc. paid $3.00 dollars or less for each - already made double my investment back with sale of 1 to a local chef -

Retired meatcutter here. My best garage sale pick-up was a Norton 3-stone sharpener. Long time ago found the cast iron framed sharpener. the green one, for $25. Got it for $17 ! She threw in an unopened can of Norton Stone Oil and 5 string rings. Hekofaday! I think the stone may have been 1930 - 40s vintage.

I'm 74 when I was about 6 or 7 we were coming home from town. Dad saw something on the side of the road. It was a butchered deer . Someone fo their knife in it. Still use that knife.
