Hard to turn a 25 to 35 k BTU's up if you need more heat.

Easy to turn a 75k BTU jet type fish fryer down to 50 or even 25 thousand BTU's.

So I would buy big and throttle down as needed.
I truly believe we need to get back to basics.

    Get right with the Lord.
    Get back to the land.
Get back to thinking like our forefathers thought.

May the Lord bless you and keep you. May the Lord make His face to shine upon you and be gracious unto you
and give you His peace. Let all of the earth – all of His creation – worship and praise His name! Make His
    praise glorious!

Adding a metal windscreen to my burner made a big difference, not only in a faster melt but also reduced the heat I felt coming off the pot. Much nicer to be near.
