    I was thinking about this thread ... and had an idea , I bet ground hog would make up a pretty good ... Chili ! Lots of spices , garlic , onions , peppers , tomatoe , long slow cooking ... might make into a good bowl of red !
    We don't have groundhogs in South Louisiana so I haven't tried it ... but Nutria works well ... sorta a wet lands groundhog !

    I agree. Had nutria tamales and other dishes. Prepared right, very good.
