    It's summertime again - - - - time for BLT's !

    My favorite cold sandwich meal is back!

    2 slices of toasted multi-grain brown wheat bread
    5 pieces of THICK cut applewood-smoked bacon, cooked "sloppy", not crispy
    2 BIG pieces of fresh-picked red leaf lettuce
    2 BIG red slices of fresh 'maters
    REAL Hellman's mayo - and lots of it (no Miracle Whip allowed here!)

    Mmmmm - - -mmmmmm----good!

    with a side of 4 big plump strawberries and a fresh white peach.

    Gooooooood eatin'!

    I just gt tomatoes planted 2 weeks ago... lettuce is about an inch tall...

    Our growing season is a little different than y'all back in MN! We plant in late Feb/March (while y'all are shoveling snow!) and most veggies are more than ready by now. It is now 100+ °F everyday here in PHX (you know, a dry heat!!!!) and what is not picked will wither and burn up fast. Got this stuff for a few days of good eatin' !

    My neighbor has two small elevated gardens and supplies me with spinach and tomatoes. I tried an experiment a few days ago and made a sandwich with fried Spam and tomato slices, with Hellmans on one side and CYM (mustard) on the other. Gosh it was good. I'm always looking for tasty food that can be easily prepared at the back of the Jeep. I microwave bacon here at home and sliced Spam is easier to fry on the road than is bacon.

    Sounds good but with Dukes Mayo. Hellmans will do in a pinch..

    Cooked bacon has a long shelf-life, even if it is not refrigerated. You see flat packs of pre-cooked bacon in the stores all the time sitting unrefrigerated. An excellent traveling/camping meat. Unfortunately, it's not that good for your circulatory system!

    I could never understand why people get rid of bacon drippings. What do they dip their toast in?

    But I would prefer crispy fried bacon not floppy soft cooked ... and a big bowl of Blue Bell Ice Cream .
