    a more healthy dirty rice

    tonight we had something new and different
    dirty rice made with ground chuck and a whole bunch of fresh sliced carrots and bunch of frozen peas added when the rice and water were added.
    tasted as good if not better than just plain old dirty rice

    Sounds interesting....would love better info into how you made it from the start.

    Sounds pretty good.

    I wonder how it'd come out to re-heat the left overs with a egg or two, add some Asian spices,
    then stir fry it like a red neck version of fried rice.

    Not Cajun, but good anyway. Fry up 4-6 ozs. of crumbled sausage, more is OK, but you don't want the sausage to dominate. Then stir in a heaping tablespoon of flour into the grease until the meat is well coated, add 2 cups of chicken broth or beer, and 1 cup of rice, simmer until rice is tender, add 1 can of Rotel, a diced onion and a diced Jalapeno and keep on simmer stirring Occasionally until remaining liquid is reduced. Serve with warm tortillas, shredded pepper jack and a long neck Lone Star. Scrambled egg optional, but traditional when draped over over the tortilla before loading it up and rolling together.

    I love all kinds of rice. Much better than potatoes for storage.

    I am down to 25 lbs and need to get another big sack.

    That sounds better than made with chicken livers. We had a friend that made it so hot you couldn't stop sweating, so delicious you couldn't leave it alone.

    here's a pretty decent basic recipe,

    there are many variations like some say beef broth some say chicken broth, I just use water added after drain all the grease from beef veg mixture.
    you can cook down the onion, celery, green pepper with the beef before removing beef fat. then add cajun seasoning
    cajun seasoning=Tony chacheres original seasoning

    or you can just get a big package of zatarans at the grocery store.

    and yes, soy sauce adds another dimension

    Oh that sounds so delicious! I just can't eat it unless I'll starve if I don't.

    I had my first party sliced piece of pizza today since forever. Then did some research and found out that 1/8th of the pizza would have been 19 carbs. I can handle that, but I had far less.

    But dirty rice? Rice has lots of carbs. I love rice!

    I'm with BJK.....having to count carbs sucks.....but like him I love rice and quite often more so than potatoes....but I will cut other things out to have a little rice!
