The summer between 11th & 12th grade I worked concrete for a couple old Italians. We started at 7 and took a ‘coffee’ break at 10 and lunch at noon. For coffee break they drank white wine mixed with ginger ale. Lunch started with them sharing a raw head of garlic, then a sandwich and a beer. Those guys ate garlic like you’d eat a pickle. They had raw garlic daily, said it kept them for getting sick.
Mom used to simmer garlic cloves in olive oil until soft. Better than butter for crusty bread or whipped into mashed potatoes.
She also put a couple canned anchovies in her spaghetti sauce. Couldn’t taste them but they enhanced the flavor.

    Roasted garlic spreads like butter.
Roast some and spread it on crackers or toast.
For those that don`t like a strong garlic flavor, roast some Elephant garlic, mash it, and mix with butter for garlic bread/toast.

    Roasted Garlic Ice Cream

    ingredients
5 heads garlic (heads, not cloves)
    2 tablespoons butter
    1 liter half-and-half cream
    1/2 cup sugar
    4 egg yolks

    directions
Roast the heads of garlic: peel off the outer skin but leave cloves intact and attached. Arrange on a double thickness of foil, put about 1/2 tbsp. of butter on top of each, wrap up tightly and bake in a 350 degrees F oven for an hour.

Cut the tips off the cloves, still attached in the head shape, and squeeze out the roasted garlic puree.

Mix the cream and sugar in a saucepan, heat to the boiling point and pour it over the egg yolks while whisking briskly.

Put about a cup of the cream into a blender with the garlic puree and blend for about fifteen seconds to make sure there are no lumps of garlic.

Mix in the rest of the cream, let cool, and use with your favorite ice-cream maker.
