The summer between 11th & 12th grade I worked concrete for a couple old Italians. We started at 7 and took a ‘coffee’ break at 10 and lunch at noon. For coffee break they drank white wine mixed with ginger ale. Lunch started with them sharing a raw head of garlic, then a sandwich and a beer. Those guys ate garlic like you’d eat a pickle. They had raw garlic daily, said it kept them for getting sick.
Mom used to simmer garlic cloves in olive oil until soft. Better than butter for crusty bread or whipped into mashed potatoes.
She also put a couple canned anchovies in her spaghetti sauce. Couldn’t taste them but they enhanced the flavor.
