    Garlic

    I finally got my garlic planted.
    I guess I should say my granddaughter got it planted.
    I took some of the excess and dried it then put it in the blender and made garlic powder.
    I like sprinkling garlic powder on my steaks and burgers.
    Adding it to jerky along with black pepper enhances the flavor.
    I am going to try smoking some of the bigger cloves and pickling them.
    Some of the bigger bulbs will be used for cooking.
    You just gotta love garlic.

    You can never have too much garlic, or cinnamon for that matter.
    A vote for anyone other then the conservative candidates is a vote for the liberal candidates.

    I used to say "unless you put them together" but then found I was wrong. Add both cinnamon and garlic to spagetti sauce. It's wonderful!

    I will agree that there's no such thing as too much garlic.

    There is no better way to ruin food, just add garlic. If it disappeared from the planet I would not starve at all.

    My wife ... LOVES garlic ... her motto is you can't have too much garlic .
    The first few times I tried to grow it ... I planted it in the spring ... I didn't know !

    I always put a couple shakes of cinnamon in my chili. Gives it an underling taste that people can't figure out but like.

    I love garlic but you CAN have too much and too often. It's one of those, "absence makes the heart (taste buds) grow fonder," things.

    Like salt, actually. You can enhance your food with it or completely ruin it.

    Using garlic powder is generally considered a cardinal sin, however, if you have to do so, go here and try it. Very very good, as far as garlic powder goes. WAY better than what you could find in any grocery store.

    Garlic is one of the best things to keep you healthy. If you eat a raw clove in the morning and one at lunch, no one will get close enough to you, to give you their germs!

    I buy garlic powder form The Spice House. And it has its place. I make a lot of BBQ rubs and spice blends(just sent out xmas presents fr family, a pound of my hot chili powder blend each, it uses garlic powder). Also for a quick hit of garlic in canned soup for a quick meal.

    I love garlic powder, far prefer it to garlic salt. I will use fresh garlic in some sausage making but think I get better distribution with powder. There are certain foods that just pair themselves with garlic. From pasta to shrimp, to enchiladas and Mediterranean foods. I love how the flavor moderates when baked, like horseradish.

    I use garlic powder on my jerky.
    I also use it when I am grilling steaks, burgers, etc.

    Garlic powder is great when you want to add garlic flavor without a lot of the odor of garlic. The odor from it is less sharp, not as penetrating...

    Cooking garlic has much the same effect. Roasted garlic is just fantastic. The finer it's made the more pronounce the garlic flavor. Oxygen has that effect on fine pieces because it reacts with the allicin in the garlic.

    Garlic Mashed potatoes

    Use a whole bulb of garlic, peel whole cloves and put into a saucepan. Cover the cloves with olive oil. Bring to a "boil" then keep at a simmer for 20 minutes. They should be soft and mushy. Add to your boiled and drained potatoes, oil and all, and mash.

    The same garlic in olive oil works great on biscuits. Spread the cooked garlic on the biscuit and dunk into the oil.

    If you know how to roast garlic the cloves can be squeezed out onto the biscuit. You'll think you died and went to heaven.

    I stuffed a chuck roast with garlic cloves yesterday and slow cooked it at 275... off the charts good stuff! Get a surprise bite of garlic every now and then and the flavor goes all thru the roast. I used 9 small cloves stuffed in slits of a 2 pound roast.

    I bought some of those fiber mats to use in my Big Chief smoker.
    They worked quite well for smoking my garlic.
    It was smoked for about an hour.
    I pickled the smoked garlic and can hardly wait to see how it turns out.
    It needs to set in the jars a while for it to get well pickled.
