    Help With Green, Red and Yellow Peppers

    We have several plants that keep producing. Green, Red, Yellow and Yellow Banana. We put them into homemade spaghetti sauce and canned them. Grilled with potato's, mushrooms and onions sprinkled with Rosemary and stuck some on pizza. Stuffed some and that is about it.

    What else do we do with these?

    Cut them up, and freeze them on a flat tray. When frozen,put them in a plastic bag, and then store them in the freezer. Then you can take out what you need, when you need them

    See above! I cut them in dice and strips and freeze on cookie sheets lined with parchment paper(prevents sticking to the tray). Vacuum bagged and into the freezer. Keeps over a year that way. I have even frozen halves to use for stuffed peppers!

    Freeze as post #2 and use in cooking .
    My favorite is Pickled Peppers , I use them on everything you use pickled cucumber or where you use fresh .
    Pickled Pepper Brine
    1 cup good vinegar
    1 cup good water
    1 tablespoon Salt
    1 Tablespoon Sugar

    Fill 2 hot sterile pint canning jars with sliced peppers , packed tightly , bring brine to a roiling boil , fill jars to top and if needed top off with a little vinegar . Wipe rim dry & Cap with hot lids and bands , invert jars and let cool . Refrigerate any jar that doesn't seal .

    People request these for presents . No artificial colors or preservatives . Love them on pizza, tuna sandwich , ham sandwich .

    Salad add on's, stuffed peppers, banana pepper chile rellenos traditional or casserole style, stuffed peppers with rice, burger and spices, grilled on sandwiches, not just Philly Cheese-steak but burgers or any hot sandwich.
    For a good Greek salad add equal parts, cucumber, green and red pepper, onion, tomatoes then add Kalamata olives and Feta cheese. Mix a good olive oil and lemon juice, 50-50 and add salt and oregano.

    Fry with onions add some spaghetti sauce and freeze for italian sausage sandwiches in the winter.

    Extra chilis get put in the dehydrator around here. After they are dry grind into chili powder whatever the color is.. I have a quart canning jar full over 4 years old and are still good.

    Cut them in half and remove seeds, then fry them (outdoors!) in olive oil to dehydrate and "limp" them, then store in a lunchmeat container in fridge. They last a long time that way, and they go great on sandwiches.

    You can core them and fill with ground meat, onions and seasoning. Bake until meat is done. A deep baking dish helps contain the juices.

    Sausage and peppers. I refer the red and yellow ones in it because they are sweeter. I cook everything in a foil pan on the grill.

    I like the red ones in stir fry.
