    Garlic butter sea trout

3 or 4 medium sized sea trout filets
    dry Italian seasoning
    minced garlic
    whole butter
    tony charchere's seasoning
    heavy cream
    your favorite pasta

sprinkle each filet with minced garlic , italian seasoning , and tony chachere's ....melt butter on medium high heat in a skillet.....cook each filet 4 min per side or until flaky.....add heavy cream to skillet and scape drippings to make fish gravy.....boil noodles until done plate up with pasta , gravy and a couple filets......mighty fine!! You can also do a few slices of garlic toast to sop the gravy with.

Oh, yeah, sea trout, with butter and garlic. A few other spices, Yum!

Does it have to be "sea" trout? What about rainbows, etc?

Rainbow should work fine. I've cooked them in a similar way, and they were delicious. Any mild, non oily fish like flounder, sea bass, rainbow trout, etc. would work.
