    That's what my mom always called them. I still make them today. Great for breakfast, lunch or dinner.

    Same basic idea... I fry a thin sliced piece of homemade low carb bread. Then fry it on both sides to toast it and 2 over easy eggs go on top. The runny yolk gets sopped up with the toast. That's some pretty good eatin'.

    We always called them egg-in-the-hole BTW I had them for dinner last night with soft-cooked centers.

    I use a tin can to cut out the center. IF I'm using pan bread I bend the can into more of an oval shape.

    Funny how they are called something different all across the country...my wife cooks them so the yoke is not hard, the cutout of bread gets toasted also and we dip the toast in the yoke...mmmmmmm-good!

    We always called them campfire eggs, mom would butter the bread and then cut the hole so it was a great piece of fried bread with the egg…
