    cooking duties today, what to make

    well here at the house opinions are divided. I got cooking duties tonight thanks to a flip of the coin.
    question is what to make, the options are
    eggplant parmesan
    chicken cacciatore
    or a big pot of jambalaya

    If ya can't do fried chicken, or chicken fried steak;
    I'd vote for the jambalaya, and not that other 'fu-fu' sounding stuff.

    We share the cooking duties like this, I don't cook inside she does. We do however grill about 4-5 times a week and most of that side dishes and all are done on the grill.

    don't know about foo foo
    italian cacciatore translates to "hunter style" browned or braised rabbit or chicken with tomatoes, peppers, onions, spices and wine. definitely something you can't find in the frozen section
    spectacular stuff when done right, you won't know till you try it, one of the secrets is to cook the meat with the bone still in it.
    at least that's what my teacher, Mama Leonee, taught

    Jambalaya !
    Make a nice big pot ... it's better the next day and still great on day 3 .
    I made a big pot of Chicken and smoked sausage on Tuesday night ...had leftovers Wednesday and Thursday nights ... I didn't have to cook anything those nights ... and that is always awesome !
    If you like ...freeze leftovers for another meal or two .

    When I cook I like to make enough for two meals ... Jambalaya , Gumbo and Chili are my twofer or threefer dishes !

    13 pound beef brisket, 10 pound pork butt, 10 pound turkey, 3 slabs of St Louis cut spare ribs was yesterdays menu. I purposely made tons of food so I would have leftovers. Van bagged and treats for this winter!

    Worked on the fourth, but our boss cooked for everyone. We had burgers, dogs and brats, baked beans, slaw, potato salad, cake and cookies. Soda, water and juice. Then there was a pie in the face contest to raise money foe our next event. $10 to put a pie (whipped cream) in the managers face. Food was excellent.
