    Hello, my name is Brian and I love Liverwurst

    I hated it as a child, but that was mostly due to my mom ruining it by putting mustard on it. Mustard and liverwurst DO NOT go together and produce a good flavor for me. I'm in ketosis and am always on the lookout for things I can eat and stay in ketosis. I remembered liverwurst the other day, and I have been eating. But is it safe for me? Is it low in carbs? Internet to the rescue. Not only is it safe but it's got HUGE nutritional value.

    I just got done eating a liver and onion sandwich, minus the bread and thought I'd post about liverwurst. When I can get it I prefer Braunschweiger Liverwurst. That just means it has onions added.

    I also like fried onions and liver, but the wife hates the smell.

    At the link there is all (maybe more) that you wanted to know about liverwurst, but cursor down and there is an idea for fried onions and liverwurst that I intend to try. One nice thing about using liverwurst, there's no problem with getting tough pieces in the liver (actually veins) since the liver is fine ground.

    Braunschweiger on rye with mayo, mustard, thin sliced sweet onion. Good eats but I get tired of it after 2-3 sandwiches... I need to see if it freezes well and cut the chub in half and freeze it then vac bag it(has to be in that order, the chamber sealer would squish it otherwise).

    Clean and Boil some Yukon potatoes. When soft and hot, peel potatoes and eat with Braunschweiger Liverwurst.

    Arrgh! You folks are killin' me with the carbs! I'd love to try the potato idea though (but I can't). In the past 2 years I've had exactly 3 potato chips. I remember every one and none of them were large.

    Liverworst, braunschweiger, liver sausage...
    I love it. I am also on a keto diet but my doc says Keep sodium below 2 grams so I still have to be a bad boy to eat it. I have always loved it, ate it all my life. My mother did as well. Sure is good with onions. Never thought of putting mustard on it. My mother ate it just slices on a plate with a few drops of vinegar on top. YUM. Also, not all brands taste the same.

    If you ever get in central North Carolina, we have this regional delicacy known as Livermush! It's made in a brick and you slice it and brown it like sausage. It's delicious, and 94% fat free.

    Livermush is made by boiling fresh pork liver and pork jowl, then remove the liver and grind it fine, add some cornmeal, wheat flour, some country sausage seasoning, and some of the broth and it sets up in a brick from the collagen in the broth and the cornmeal. People that grew up on it swear by it.

    It's pretty much descended from the poverty in Appalachia stemming from the settling of the Blue Ridge and Great Smoky mountains when German immigrants showed the mountain settlers how to use all of the hog except the squeal. Many a coal miner went into the mine with cold livermush sandwiches, there are livermush festivals here in the state, you just have to try it to see if you like it.

    It tastes more like a cross between a mild flavored liverwurst and country sausage. It's not nearly as liver flavored as other meats made with liver. It would be more popular but the name I think puts many people off.

    I too like a good liverwurst sandwich wheat bead and mayo. In the evening for a snack liverwurst spread on ritz crackers.

    onion are about 10% carb so go light on them. A couple of fried onions with a good steak can kick you out of ketosis for a day.

    edit: Yes, ALL veggies are carbs. The average to get kicked out of ketosis is about 40 grams of carbs but it varies per individual. I limit my intake to 20 grams/day to stay safe. I've been in ketosis now just a few days short of 2 years. I would have had far more problems being in ketosis years ago when I was a big eater. Not so much today.

    Slice the Braunschweiger 3/4" thick, 1/2" thick sweet onion, good Rye bread. Spread generously with good hot German stone ground MUSTARD.
    Now that's a Sammich worth eating.

    Any one who would put mayo on any kind of Liver sausage would probably put kidney beans in Chili.

    I get something at the deli-case to make sandwiches ...called Liver Cheese (aka Liver Loaf )
    Is this sorta like Liverwurst ?
    I been having the urge for a Liver Cheese w/ mayo on white Wonder Bread sandwich so I'm going to our favorite deli tomorrow and get some sliced .
    I cant see putting mustard on a liver product ...but that's just me .

    It's kept with the lunch meats for slicing in the meat case of the deli and Oscar Mayer sells a pre packaged sliced liver cheese , but I like the one the deli-man slices .
    It's square in shape with a white edible ring around the outside ... I think it's lard or fat ... I eat it .
    The Oscar Mayer has a rather strong liver flavor ... and is made of Pork Livers , Pork & Dehydrated Onions are the first three ingredients . The deli sliced is a different brand and has a milder flavor , although I ate the Oscar Mayer pre=packaged all my life ... I do admit it has a strong liver flavor and I now prefer the milder stuff ... must be getting old .

    Not a fan of Liverwurst! I concluded that something with the word “wurst” in it was a warning!
    However, my wife loves the stuff! Though I question her choices of cuisine.....she likes potted meat! memtb

    wurst means sausage, but you won’t find a particle of liver anywhere near my sausage!

    My favorite brand of liver werst has bacon in it and is smoked.

    Thanks for the link . Looks like liver cheese (square loaf ) and liverwurst (round sausage like)
    are very similar . Oscar Mayer has made the square liver cheese as long as I can remember .
    If you like liverwurst and they are ever out of it ... you might try some of the liver cheese , it does have a nice pork liver flavor ... for those of us who enjoy liver ... if you don't like liver you ain't gonna like liver cheese !
