    Good way to use Annato in Cooking?

    I went to my grocery store's Ethnic isle to pick up some of the good stuff, looking for chili powder. Turns out instead of getting my favorite chili powder I got a little bag of Annato instead. I've heard it's used as a rub and a dye for cooking, but I'm having trouble finding recipes that use a lot of it. I don't want to throw it out since it's bound to be useful in something.

    Adds a nice reddish yellow color to foods with a subtle flavor of its own.

    As you mistook it for chili powder I presume it was ground and not whole?

    If so then simply sprinkle some into most any dish you would like to color up a bit. Or use it in a meat rub.

    Thanks for the tips! I'm certain I'll figure out how to make use of it. And yes, it was ground, which probably led to me mistaking it for Chili Powder.

    I just looked up annatto and it appears to be used mostly as a coloring agent.
    I have seen it listed in the ingredient list of so brightly colored products.

    Cubans use it in Rabo Encindido (oxtail) to give the gravy a reddish color, my gf uses it in some Puerto Rican dishes. As mentioned earlier, it is more of a coloring agent than a flavoring spice.

    As to where you may have eaten it, and I know you didn't ask. Ever have yellow Cheddar? That's annatto that makes it yellow, or it can be.

    Most of my cheese is the good quality local stuff from Oregon and Washington, but I suppose since the Annato has a very faint taste it would make for a good food dye.
