    Pecan, oak, persimmon Because I can walk out the door and cut one of them.
    Pecan is great for a smoked turkey. Oak works good on a wild pig.

    I’ve used a lot of Chinese chestnut this year. Loving it for pork and beef. Not a fish eater so can’t say how it is. I tried some old salvaged American chestnut once. It was dusty/old tasting.

    Smoking wood gets that dusty old taste if it is older than 3-4 years. I preferred to not go past 2 and any excess would go to the fie pit for bonfire nights. When I was burning wood I went thru 2/3 cord a year in the smoker. Bought it delivered in 1/3 cord racks. Yes bought, I live on the prairie and trees are pretty sparse! Firewood company up north sol BBQ wood to restaurants and caterers and I was close to his route to Sioux Falls so they would drop it off and move it to my wood shed for me.
