Thread: Homemade Teriyaki Sauce

    Homemade Teriyaki Sauce

    1/2 c. low-sodium soy sauce
    1/4 c. rice wine vinegar
    1 tsp. sesame oil or to test
    1 1/2 tbsp. honey
    1/4 cup Madiera sherry (if you don't have Mirin sweet rice wine)
    2 cloves garlic, minced
    2 tsp. finely minced fresh ginger
    3 tsp. cornstarch
    1/3 cup water to mix the corn starch in

    Combine all ingredients, bring to a low boil and simmer 5 minutes.
    Let cool and bottle.
    Some strain out the ginger and garlic. I don't.

    Quick Teriyaki Sauce

    2/3 cup pineapple juice
    1/4 cup low sodium soy sauce
    1 teaspoon garlic powder
    1 teaspoon ginger powder
    1 teaspoon sesame oil
    2 tblsp brown sugar
    1 big tblsp corn starch

    Mix it all together, bring to a soft boil stirring constantly, cool

    As always, adjust to your own taste.

    Looks gook.

    I do a little Asian cooking, and I got sesame oil for one recipe.
    I might have gotten a bad batch or something.
    That stuff stunk so bad I couldn't put it in the kitchen trash, I had to take outside to throw it away.

    Next time, Go to an Asian store. get the real 100% stuff. The Asian stores here turn it over pretty often, so you always have fresh product.
    A lot of sesame oil is a blend of other oils. It is also cheaper at the Asian store.

    Did this recipe for chicken skewers, vegs cooked on the grill last night, very good. I added 1/4 tsp baking soda to the final mix because I only had dry Marsala and the result was a little sour, the soda fixed that.

    This recipe is from my mother it is over 65 years old. She got it from a Japanese war bride.

    Mom said she just used what she used every day. Most likely Veg oil
    The wife uses canola oil
    If you like sesame oil try it.

    Any good oil such as peanut oil will do, but you may want to mix in 10 percent or more Chinese or Japanese sesame oil for a more authentic taste.
