    Bisquick egg, bacon, onion, cheddar pie

    An old standby I make now and then if I have milk in the house(I can't drink it and be in public places...). This can be scaled to any amount and was a standby at the deer camp for breakfast or lunch. Makes 2 large servings.

    12 oz bacon cut into bite sized pieces and fried until crisp. Save the fat
    4 eggs
    1 cup milk
    1/2 medium onion grated or chopped(I was grating cheese so...)
    4oz shredded extra sharp cheddar(or more)
    Bisquick as needed(I never measure this so not even a guess)
    S&P to taste


    Beat the eggs and add the milk and mix well. Add the onions and 2/3 cheese and stir in. Add Bisquick until you have a runny pancake batter, if it gets to thick just add a splash of milk. Add salt and pepper at this point but remember the bacon and cheese add salt. Put a tablespoon or so of fat in the baking dish and coat the bottom and sides then add the bacon and spread it out. Add the batter mix and top with remaining cheese. Bake at 375 until a knife inserted in the center comes out clean.

    Nice quiche.

    Next time you make this, do it in an aluminum or stainless skillet. Much easier to portion (slice of pie) and clean up.

    Came right out of that glass pan, and it adds a crunchy crust. Not really a quiche, much heavier than that.

    how much does this rise? Im trying to get an idea how deap to pour it in a pan.

    wonder too mary if you couldn't add the bacon and the rest of the cheese and cook them just like pancakes?

    Don't know why, but I rarely buy or have Bisquick around the house. Pancake waffles and such, I usually do from scratch.

    I do however usually have a couple of boxes of Jiffy cornbread mix in the pantry. Adding a can of diced green chiles to the above mixture sounds like it could be a winner!

    Never tried, it is a thinner batter... and a lot more egg

    Most of my recipes are simple peasant food. Stuff to feed a crowd cheap. Except my version of lasagna, that is expensive! 5 cheese, beef lasagna.

    What we need is a recipe sticky and move them there. I could compile a cast boolits cookbook if people want to mail me recipes. I have software for it and could make it available on pdf or CD for a small fee.

    Let me know if you can read the PDF, worked here. If it works I can export an entire cookbook to pdf and start collecting recipes. What do you think of a yearly Cast Boolits cookbook for $3 with whatever isn't needed for shipping and cd's going to the forum? I could release it early Dec ech year and keep adding recipes to the previous version.

    I'm willing to chip in more than that, with most of it going to you. I also cook for myself and tasty, simple, filling home recipes are like gold to me.
