I love my knives, and this may change, but I think the buck 192 vanguard would be my choice.

I have a 30+ year old buck 110. If the new ones have comparable steel, hands down first pick.
I have a new 110, made with 420HC stainless, and I have a buck 119 made with 440c stainless. I prefer the 420 steel because the 440c is too dang hard to sharpen. I've had a couple other run ins with 440c by other makers, and unless they all temper it so hard you cant sharpen it... then I just dont like its properties.
The original (which I have) Cold Steel SRK.
Sawinredneck, I forgot about that knife. I aint ever owned one, but i've looked at them and thought bout how I aught to get me one. Sure looks right to my eye.
Well now that is a broad question .
1 daily driver ? 340 UH by Shrade Imperial .
2 hunting ? It depends on how far off the beaten path I want to go . I have an 8" Buck single fixed blade if I were packing way in but the 2 blade folding Old-timer at 4" would have to wrestle the single blade drop point 3" folding Uncle Henry .
One knife for all purposes, not nearly as broad as 1 gun for all purposes. It'd be a lot harder to make 1 gun do everything, but a person could carry skin all different kinds of game, defend themselves, build a fire, cut a package open and cut up supper on the plate all with the same knife.
I'm not going to comment on the new ones, I hear it can go either way, but I've used this knife, and a hammer, to cut frozen hamburger into smaller chunks to fit in a small freezer! I do NOT recommend this practice!
But everything you heard about the originals, I can assure you, it's true!
I carry an old timer 340. Been carrying the same for about 10 years. I also carry a leatherman original, and a swiss army classic all the time. I sometimes carry the buck 110 or a sheath knife for months at a time.
If I could have only one? Would have to be made by Randall.
Pictures of the randall in question would be cool.

Next to last would be my collection of Rapala Fillet knives from small to large.
And I would really hate to see my EDC Ganzo 728 go with its attached mini flashlight and firesteel.
But yes, the Remington would be the last. Carbon steel, it was a butcher knife that I bought at an auction for a couple of dollars. It was old way back then in the 70's.
I removed some material off the tip and changed the point so it made a good skinner. In its best year I field dressed 3 deer, skinned two, and was almost through cutting up the second when I had to take it to a steel and touch the blade up a bit.
They knew what they were doing back then.

My old KABAR. (not a repro piece of junk). The KABAR's aren't fancy, but they are tough. "Purdy is as purdy does!"
I would say the Buck 110, but they won't hold up to rough use. For a rough use hunting knife I'd say a kephart.

A folding Kershaw might be more practical, but the Randalls have some sentimental value to me as I have a "Hunter" made in 1943 by the old man ("Bo") himself and passed down to me by my father.
I don't know the model, but the CRKT I keep in my bag is the one knife I'd never get rid of.
Why hasn't anyone mentioned any folding knives with the top grade of steels we have today? M390, S110V, M4 etc.?

I'm so old school it's in 3' letters across the front of my high school .
Well...out of my current knives and stuff I've used, the SOG Seal pup would be mine. I just prefer a strong fixed blade with good length to it. Used it for filleting fish with no issues and got it sharp enough to shave with when bored....
I've been carrying my benchmade auto and a gerber multi tool for so long that it would be my knife(s) if I had to skedaddle or something. But if I put any thought into it I would probably opt for a nice fixed blade like the SOG Seal Pup, or one of the Gerber survival knives I have.
I don't know much about high end commercial knives. If I could only grab one [that I already own] it would be the one I just finished making out of a 50 year old meat cleaver. I don't knwo what kind of steel they made that old thing out of but I ruined a couple of brand new hack saw blades and both sides of a nicholson mill bastard file shaping the silly thing.
Lemme tell ya though, it took an edge that was darn impressive. It took a long swath of hair off my arm in a single pass.

I have an old Soligin heavy cleaver . Man what a nice piece of steel that is ! Nothing to getting it sharp , yes shave sharp , and it stays sharp like thin sliced tomatoes sharp . Need the ribs off the deer spine ? 5 at time fast enough ? I love it ........ impractical for daily use but it makes short work of quarters and whole chickens .

IMO, it's the perfect size. Slim design, but large enough to do heavy chores. Comes with a belt pouch but I never used it. Disappears inside my jean's pocket. What I also use for field dressing and skinning big game. Easy to sharpen and holds an edge. Wore out the blade, after 30 years, and sent it back to Buck for a rebuild. Came back promptly, like new.

A Kershaw folder with a 2 1/4'' spring assisted blade. Fits in the coin pocket of my jeans. Real easy to always have with me and covers a lot cutting chores.
I got one of these on sale for $3.99. Great knife. I will probably use it for many years.

I like this one . It holds enough oil to slice cheese , it slices tomatoes as well as any Ginsu ever . It's also handy for removing ribs and slicing lunch meat .

I made that as an exact copy of Joe Musso's Bowie which has LOTS of good evidence it might have been owned by Jim Bowie himself. I forged it from a bar of 1080 steel, heat treated to about 59 Rc hardness, so it will cut.
If I had to pick one it would be a drop point Benchmade Griptilian in D2. For EDC I prefer the Mini version. But the larger one is more useful if I have just one. I have two in N680 but I'm not a fan of the steel. It chips easily and loses it edge quickly. First one I bought was in D2. While harder to sharpen it holds an edge forever and is extremely tough. After looking at their custom configurator I think I'll be ordering another mini in S30V. Seems like a good compromise. I've never had corrosion issues so M4 may be on the table as well.
My everyday carry knife is an assisted opening Kershaw. Not sure which one....maybe Onion? Only cost me about $40.
Anyway, it is light, handy, and I could gut a deer with it if I needed to.
Probably not a great knife or one to show off but it works.
Id like to get an esee 3 for packing around. Nice looking size, simple.
