This is my recipe for stuffed pepper soup. My family loves it and I thought it was pretty good myself.
THX's Stuffed Pepper Soup.
1 lb. Ground Beef
1.5 Green Peppers chopped
1 cup onion (optional)
1 can (29 oz) Diced tomato*
1 can (15 oz) tomato sauce
1 can (10.5 oz) chicken broth
1 can (10.5 oz) beef broth
2 cup 5 minute white rice
1. In a large stockpot, brown beef. Drain fat, add pepper and onion. Cook onion until translucent, do not brown.
2. Add tomatoes, tomato sauce, broth, and season to taste with salt and pepper. Cover and simmer for 30 to 45 minutes.
3. 5 minutes before done simmering, add rice. Continue simmering.
If rice isn’t cooked at the end of the 30 to 45 minutes, simmer
An additional 2 minutes at a time until rice is cooked.
* I prefer to use basil, garlic, and oregano seasoned diced tomatoes. These can easily be found in the store in a can. If you don't have them, season to taste. :mrgreen:
