View Full Version : My stuffed pepper soup.

This is my recipe for stuffed pepper soup. My family loves it and I thought it was pretty good myself.

THX's Stuffed Pepper Soup.

1 lb. Ground Beef
1.5 Green Peppers chopped
1 cup onion (optional)
1 can (29 oz) Diced tomato*
1 can (15 oz) tomato sauce
1 can (10.5 oz) chicken broth
1 can (10.5 oz) beef broth
2 cup 5 minute white rice


1. In a large stockpot, brown beef. Drain fat, add pepper and onion. Cook onion until translucent, do not brown.

2. Add tomatoes, tomato sauce, broth, and season to taste with salt and pepper. Cover and simmer for 30 to 45 minutes.

3. 5 minutes before done simmering, add rice. Continue simmering.
If rice isn’t cooked at the end of the 30 to 45 minutes, simmer
An additional 2 minutes at a time until rice is cooked.


* I prefer to use basil, garlic, and oregano seasoned diced tomatoes. These can easily be found in the store in a can. If you don't have them, season to taste. :mrgreen:

Oh yeah, thought I would add that this really doesn't end up a soup. It ends up being a thick almost stew like mixture.

If you want it thinner just use less rice.

Here's a pic of the finished product when made exactly as the recipe states.

I've found it to go great with bread added to the meal.

Bread bowls work well too.

And for some reason, the taste of this stuff doesn't change when you reheat it later.

I usually avoid leftovers, but this one has me going back for more.

MMMM. Sounds good to me. My Dad used to make stuffed peppers. Sometimes he put cheese on top. I bet cheese would be good on top of that! Thanks for posting it!

HMMMM, I still have a bowl of it in the fridge.

Guess I ought to break out the cheese grater. :mrgreen:

It's good with a little Parmesan cheese sprinkled over the top.

I had to try the soup with cheese on top. It was good, but now it's all gone. :???:

I will be making some once company comes. I will probably add corn and cheese (I do to almost everything else...).

That recipe is enough for about 6 good sized bowls.

Adjust as needed.
