i just returned from south dakota pheasent hunt and would love any recipes you might share.

took my old lafever 16 gauge my dad gave me christmas 1960,funny thing about that shotgun....every time i pointed it right a pheasent fell.

Pheasant Balls. Cut up into 1"X1" cubes and soak in 7-UP, batter and deep fry.

Split in 1/2

Cook as you would dark meat chicken

Grilled over a indirect charcoal wraped in bacon is my favorit way

Cut into strips and wrapped in bacon w/ a little season salt.
Had it tonight. Last of last year's haul. Going back up to Kansas at the end of the week to hopefully get some more.

Plank it!
Split the pheasant, nail it to an oak board. Set at an angle close enough to an open fire to cook it, but not close enough to catch on fire.
That has a good flavour to me. I use bacon strips across the pheasant also.
Skin on.

Going back up to Kansas at the end of the week to hopefully get some more.
