Here's what I used:
1 cup of your favorite rice blend. (I use 2:1 white:brown)
1 can of diced tomatoes, not drained.
1/2 a bag of frozen broccoli. (you can use frozen corn/your favorite veggie too)
2 3/4 cups water
2-3 tablespoons of cooking oil.
1lb of ground elk burger.
1 Jalapeno pepper, finely diced.
3 cloves garlic, run through a garlic press.
1 teaspoon of Cumin
Pepper to taste.
First thing I do is brown the burger meat. Drain and set aside.
Same pan, add your oil, rice, diced jalapeno, garlic, pepper, and cumin.
On medium-medium high heat, brown the mixture. You want the rice to be about halfway browned.
Once the rice is browned, add canned tomatoes, water, and frozen veggies. Turn up the heat and bring the mixture to a boil. Cover and reduce heat. Stir about once every 5 minutes. In about 20-25 minutes your mix should be cooked. Taste it once the liquid is almost gone and you may have to add a little more water if the rice is still not done.
Should feed at least 3 or 4 hungry folks.
