View Full Version : Broiled & Baked Salsa Chicken

Probely a lot of names for this dish
And a lot of ways to ajust to taste
But to simple and tasty to not pass along

2 basic things needed
Chicken and fresh chunky salsa :kidding:, please not that store bought stuff


I preferr no salantro ( sp )in the salsa for this
And make the salsa to your taste , I add lots of hot peppers , garlic & onions

I used boneless thighs tonight , but I normaly just use a cut up chicken
Use what ever parts you like

Broil your chicken till about 1/2 done flipping a least 1 time

Add to a baking dish that has a cover , drain off the fat if using the same pan as you broiled in ( I do )

With a layer of salsa on the bottom , add the chicken and cover with salsa

If to hard , just dump the 1/2 done chicken in the pan , cover with salsa
Cover the pan and throw back in the oven at about 350 degrees

Bake till bubbling and hot ,then cook for 15 min or so

Turn off oven , remove cover and allow to set uncovered in the hot oven and contuinue cooking for at least 15 min to 30 min with the door closed
To allow the salsa juice to thicken ( evaporate a little )
As you prepare the rest of the meal

Serve over rice
Or cut up the chicken and serve on warm tortillas

My oven runs hot and I cook by eye
So ajust cooking time & temp so the chicken is done enough to fall off the bone

I make up enough to eat the next day or 2
As I love to cut up the chicken and make cold chicken & salsa sandwitchs
Or add it to your eggs in the morning
