Tonight I was given part of a pan of corn bread with jalapenos and some creamed corn ? in the mixed before baking
Not sure if it was creamed corn , but there was wostly whole corn in it

It came indirectly from a person I would preferr not to talk to

So I figured someone here would have a recipe I could try

BTW it wasn't a sweet corn bread

You could use this one and substitute Japs for the green chilis:

Carpetman's Mexican Cornbread

1 cup corn meal (yellow)
1 cup milk
2 eggs
1 teaspoon salt
2 tablespoons cooking oil
1 can cream style corn
1 lb ground beef
shredded cheddar cheese (about 1 cup)
1 small can (4.5 oz) chopped green chilies
1 Teaspoon baking Soda.

While the meat is browning, mix the cornmeal, milk, salt, eggs, cooking oil, and cream style corn.


After meat is brown add the chilies into the meat. Grease a baking dish and pour in half of the corn mixture. Add the meat on top of the mixture you poured in. Top the meat with the grated cheese. Then pour rest of corn mixture over that. Bake at 400 for 30 minutes. Please give me feedback if you try it.

I don't know how hot is "hot" or ""HOT"" for you but here is my recipe for "HOT" cornbread. Try it if you like hot, cut back on the pepper if you think it too hot!

2/3 CP of all purpose flour
2/3 CP of corn meal
1/2 to 1 TBS of sugar [helps make brown crust, not for sweet!]
1/2 Tsp of baking powder
1/2 Tsp of salt
1/4 Tsp of baking soda
1 egg
1 CP of butter milk
3 TBS butter [or solid shortening]
3 1/2 chipotle or jalapeņo peppers, minced!
1 small can of shoe peg or white cream-style corn
8 strips of thick sliced bacon, cooked and crumbled

In a large bowl combine first 6 ingredients’, in another bowl whisk together egg and buttermilk. Place butter or shortening in an 8in cast iron skillet in a 425 degree oven for 3 to 5 minutes or until butter is melted. Stir the egg mixture into dry ingredients just until moistened. Fold in corn, peppers and bacon. Carefully swirl the batter into the skillet to coat the sides and the bottom of the pan. Bake at 425 degrees for 18 to 22 minutes until done and golden brown. You can also use the bacon drippings for the shortening if you like, just don't burn it!
Serve this warm with butter..

Another recipe I posted earlier for Wampus Bread is similar but has tomatoes and etc in addition to corn and peppers. Give it a try also.

ALL cornbread is good. It's just that some are better than others. Ditto on the million recipies

I love a lot of scice and heat
My lady isn't so wild about the heat

So I guess I will be the judge

Here's the cornbread I always make:

1 1/2 cups yellow cornmeal
1/2 teaspoon salt
1/2 cup cooking oil
1 small can creamed corn
3 Tbl. sugar
2 eggs
8 oz. sour cream

Bake 400 degrees

30 minutes for muffins or 40 minutes for a cake.

From what you are describing, I would think that if you would throw in some minced Jalapenos, this recipe might get you there.

Grandmother gave me this recepie that I modified a bit.

1 1/2 cups stone ground corn meal
1/2 cup flour
2 eggs
3 Tbs sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
couple drops vanilla
milk/buttermilk to make batter
about 2 heaping TBS bacon grease put in cast iron skillet and heated, dump excess into batter

Bake at 400 degrees until top is slightly brown.

If you can find it, try some White Lilly cornbread mix and use the recipe on the bag. If you use butter milk the cornbread will rise better. You can get by with some lemon juice added to regular milk (to add some acid to help with the rising) if needed.

You can add corn and jalapenos to the mix if desired.
