I knew Sat evening there wasn't going to be any work today [smilie=b:[smilie=b: so I got a 12 lb deer roast out of the freezer to defrosted

This AM I mixed up a batch of "Whats in the house" dry mustad based rub
Ground up some Garlic and hot peppers to put in as I larded it with Bacon

Started a batch of Oak charcoal (my brother made for me ) in the smoaker
And put on the rub

Set the smoker for a lower temp ......long smoke , right now the smoker is running 218 degrees

Not sure exactly how long it will take to smoke& cook
But in a few hours I will check the internal temp

I added a second batch of White oak chunks just a few min ago

Howdy: My wife just took a smoked deer ham out of the oven (smoked flavor like a ham). delicious. I'll post a recipe for leftovers -- hop'n jack-- when she has time to get it for me.
