Aerodynamically speaking would the flats on Lee buckshot cause them to "plane" in flight? I plan to use my father's vibratory table and a metal pan to roll the sprue as round as possible. Just curious.

Sprue or not, I haven't noticed anything one way or the other at Buckshot distances.
I use a set of HF flushcutters to trim my Sharpshooter sprues though.

I haven't specifically noticed any "flat" or sprue related "fliers" either: ......But I still tumble my cast buckshot long enough to render the sprue area "non-obvious":
