View Full Version : Recipe for instant pancake mix

Thought I would share a recipe for making quick pancake mix. I refuse to pay a huge price for something you can make yourself and know what is in it, so here is what I use.

Ingedients:
6 cups all-purpose flour (have actually used most types of flour including bakers flour)
1 1/2 teasponn Baking Soda
3 teaspoons Baking Powder
1 tablespoon salt
2 tablespoons sugar

Mix all in a large jar/can/ziplock bag. Mix well by shaking etc. Just like the original Baking Soda, you can store it for somewhere around 6 months. Storage has never been a problem for me, it is gone long before that.

to use:

1 cup mix
1 cup milk
1 egg (supposed to seperate yolk, but I never have)

Mix enough to combine and make batter. You don't have to mix enough to remove all lumps.

add 2 tablespoons melted butter to egg then mix in
add fresh fruit -drain well- usually less than 1 cup (good with raspberries, strawberries)

To cook:

As you would other pancakes

I use a cast Iron griddle bring to temp, put a little butter on griddle, dump batter on, watch for bubbles to dry and turn. Off course your experience may vary so watch the color. (NO DON'T FOLLOW BROWN IS COOKING BLACK IS DONE).
