Sourdough starter will outgrow its container. Some should be removed periodically, and this is called "discard." The word is a misnomer, as the bread dough is rarely discarded. Recipes for discard flatbread are numerous; here is one:

I found something VERY cool for home bakers, this would pertain to baking sourdough bread as well, we all have to "proof" the yeast by rising the dough, this is a folding proofer that can rise dough, make yogurt, slow cook things, it appears to be pretty versatile:
