Now that there were enough hard freezes to kill off most of the tops I dug mine today. Despite the drought I got a decent number of roots. Tomorrow is peel and grind it, add a little vinegar and salt(to taste) then into 1/2 pint jars and the freezer. Gets HOTTER while in the freezer!

Debated dehydrating some for horseradish powder, maybe a substitute for black pepper is peppercorns get hard to get...

my patch came direct from Hungary after a local garden supply owner came back from vacation there - tops still green here - 80 degrees here yesterday almost a 100 year record for October - try some fresh shredded over a prime rib -

Thanks for the info. We have a few plants that we never knew quite when to harvest. Apparently it is time since we have had two killing frost nights in a row. The sauce we can make should go well with bear roasts.

Oh my, oh my........creamed horseradish on prime rib...! Wonderful. I always tell the waitress to double down on the horseradish.

This thread made me laugh. “If your nose ain’t burning, you didn’t do it right” also love horseradish on prime rib. Both raw and creamy

I had horseradish growing in NH. Roots got under my Cherry tree and the apple tree. Only thing that would kill it - believe it or not, was Artemisa. Plant it over the horseradish and you don't see it again.

I am a horseradish super fan. I was eating mustard and horseradish long before French's decided to bottle it. A must for seafood. Ham sammich! And the most awesomist.........bacon-egg-cheese sammich with mustard and horseradish...so fine.

+1 Hoodat. After I was grown my mother and a neighbor shared a grinder that was used 1/2 way between their houses in the fall to grind horseradish. Once used for horseradish the grinder was not suitable for anything else.
