I have been reloading my 308 for years with imr 4895 and Seirra 150s. How much 4895 would be a good combination with a 311041 or 311672 for deer at 100-150 yds. Do either of those bullets have a significant advantage over the other. I like the lighter weight of the 627.

I suggest a soft alloy for deer; 50/50 WW/lead. Size at .311" and lube with Javelina or one of Lars 50/50 lubes. I like to use Hornady GCs for these loads. Start at 26 gr 4895 and work up in 1 gr increments until accuracy goes south to the point it doesn't suit you. That will usually be around 30 +/- depending on the weight of the bullet. Use a 1/2 gr dacron filler over the powder. Clean the bore every 7 shots. Pay attention to where the first 2 shots out of the cold, clean barrel go. If you don't clean this often fouling will catch up with you and inaccuracy will be the result. If you've not got the deer in 7 shots you need to go back to the range and practice more:-)

Depending on the twist of your barrel and it's accuracy potential with you shooting it you should get acceptable hunting accuracy from 1950 fps to 2300 fps. The faster 10" twists will start loosing accuracy before the 12' twist barrels do.

The .308W is a fine cast bullet cartridge and will do you well.
