Looking for recipe for Blackberry Cobbler with Lemon-Rosemary Biscuit Topping that I had at Churchill Downs. Can find several Cobbler recipes but not the same taste.

Blackberry Cobbler With Lemon Rosemary Biscuit Topping

Servings : 2

Ingredients:
1 cup and 1/4 cup water , separate
1 pound fresh blackberries
2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon fresh rosemary
2 tablespoons butter- chilled well
3/4 cup chilled buttermilk
1 cup granulated sugar
1/4 tablespoon cornstarch
4 teaspoons baking powder
1/2 teaspoon fresh grated lemon zest
3/4 teaspoon kosher salt
2 tablespoons shortening - chilled well

Directions:
1. In a medium sized sauce pot combine 1 cup water , sugar and blackberries.
Cook until blackberries start to break down and syrup becomes sweet and thickens .
2. In a small bowl combine cornstarch and 1/4 cup water to make a slurry to thicken the
cobbler filling . Add slurry to the blackberry mixture and cook until thickened.
3. Place cobbler filling in a cast iron skillet .
4. Preheat oven to 375 degrees F
5. In a large mixing bowl combine flour , baking powder , baking soda , lemon zest ,
rosemary and salt. Using your fingertips , rub butter and shortening into dry ingredients
until mixture looks like crumbs (the faster you work the better , you don't want the fats to
melt)
6. Make a well in the center and pour in the chilled buttermilk . Stir just until the dough
comes together, the dough will be slightly sticky .
7. Top your cobbler with lattice or sheet of dough and bake until top is golden brown , about 15 mins.

It was bothering me that no one had a recipe for you ... so I found one !
It's not from my Grandmother , she's never been to Churchill Downs, but was the best I could do ,
I hope it has the taste you are looking for .
