Every once in a while I'm introduced to a new gastronomic experience that's so awesome I just have to share it.

Mt.Olive pickled Vidalia Onions!

I met a trucker in the pickle isles that talked me into trying them. Wow, wife and I had a fish sandwich dressed with them last night, and they where a perfect match. I can imagine dozens of things to use them for.

Are you familiar with them? Then tell it.

Mt. Olive is a NC brand and yes those pickled vidalias are really good! They make some other stuff that's sorta new and off the wall that's good, look up their catalog.

I'll be on the look out for those. I have purchased Mt. Olive brand pickles many times.

If you are willing to order them online, Walmart has them. A 16 oz jar is $2.74

A local catfish restaurant serves them as "fixins" with every meal. I eat them by themselves. Maybe not the Mt. Olive brand but they are really good. Have to put a word here for another of my favorites....pickled green tomatoes. They go really well with pit barbaque.

Check your local Wally Mart Stores ... our local W M Stores carry Mt. Olive products , my wife likes the Hamburger Dills , I will look for the Onions .

When I'm putting up pickled peppers , I like to add Vidalia Onion slices to the jar.
Here is recipe for pickling brine for peppers and onions and garlic too :

1 cup white vinegar
1 cup Water
1 Tab. Salt
1 Tab. White Sugar
fill 2 - 8 oz. jars (steralized and warm) pack jars with sliced peppers/onions/garlic as desired.
Bring water -vinegar-salt -sugar to a boil , fill jar with hot liquid , add extra vinegar to top off , if needed . Have two new lids and rims ready . wipe jar rim and cap w lid and ring .
Let cool and store for 1 week or two before using .

Easy to pickle your own when vidalia onions are in season. Friend from TX brings up a 50 pound sack at harvest time that I split with a bunch of friends. I pickle some with a simple 50/50 vinegar/ distilled or RO water brine that I salt to taste. Cold pack the jars with onion rings, pour the boiling brine over, wipe the rims and add the lid and band. AT that point you can either let them cool and do as a fridge pickle to eat within 6 months or water bath can them for shelf stable storage for a year. Good stuff on a sub sandwich, fish sandwich, burgers...

I like them just as a side next to a sandwich like a kosher dill. Good eating.

Thundarstick ... THANKS !
Last night I tried out the Mt.Olive Pickeled Vidalia Onions for the first time ...
We were having Tuna Salad Sandwiches , which I usually eat with Mickles Pickles , but had a bought a jar of MOPV Onions because of your post . I had never tried them before ...
WOW ... LIKE LIKE LIKE !!!
Totally different and good , the pickling is just sweet enough and the Vidalia Onion flavor comes throught nicely ... Okay ... I'm hooked on these bad boy's ... I Really Like Them and wouldn't have tried them except for your posting ... Appreciate the Good Eats :drinks: !

I was getting a little bored with just Mickles cucumber pickles ... but these Vidalia Onion ,along with Mickles Jalapeno pickles and the Pickled Gypsey Peppers (I make at home) make for a great range of different flavor options !

The Mt.Olive Pickled Vidalia Onions are a huge hit on a Meat Loaf sandwich ... as witnessed by myself and daughter Sunday night .
It was hard , but being the good Daddy I am ... I shared my Pickled Vidalia Onions with my daughter ... she thougt they went quite well with the meatloaf on a sandwich ... better than cucumber pickles !
And I must agree!

Last night (Monday) my Daughter shows up at the house with some paper work for my wife ...
since it was so close to dinner time ...She thought we could have another meal of Meat Loaf Sandwiches and Mt. Olive Vidalia Onion Pickles , like we had Sunday night ...
You have created MOVOP Monster ... I will get her a jar ...
I don't mind sharing mine but I don't want to create a "shortage " on my end .
