Well, at least steers that decide to leave the pen and hide in the willows by the river.

Worst part is that it is for my mother's neurosurgeon. At least he has his own butcher to get the cutting up part done!

I should have mentioned that it was a planned slaughter - so the only things that changed were the time and the place.

Never dealt with cattle. How long do you have after slaughter to get it processed?

Never dealt with cattle. How long do you have after slaughter to get it processed?This customer prefers his to be in the cooler for 50 days -"dry aged" prior to cutting, most hang for around 5-10 days. This one is currently in the cooler - I let him hang overnight here, it was a low of -2°.
