Just mixed a small met loaf for supper.
1 lb 80/20 hamburger
1 egg
1 small tube ritz crakers
1/4 teaspoon butter
1 strip of hickory smoked bacon
3 spoons of mild salsa
salt pepper and a touch of molasses

Will do biscuits and green beans with it.

Its in the oven as I type this. Will cover with barbecue sauce and cheese when done.

Should have enough for supper and a cold sandwich tomorrow.

Nice! And the great thing about meatloaf is the sandwiches from the leftovers. Way back when I was cooking for my crew we'd have a huge meatloaf for dinner Monday and meatloaf sandwiches for our lunches until it was gone.

I love meatloaf, and biscuits and green beans. Actually I love just about everything made with hamburger.

I love meatloaf. But I use ground chicken instead of hamburger. I also theme my meatloaf's. If it's going to be Mexican. I then use taco seasoning and salsa. With tortilla chips instead of Ritz crackers. When I'm making a regular meatloaf then it's chicken, Ritz crackers, one egg, ketchup or barbeque sauce, Italian seasoning and what ever other seasonings I think to throw in.

And yes MEATLOAF SANDWICHES ARE THE BEST. And you have to add a slice of American cheese mixed with cheddar. Makes for a stronger cheese flavor. One store I buy it from calls it an Italian mix American cheese. Oh yes and don't forget the Mayo (Helmens).

Well I got the "experts" opinion at dinner time. Daughter her husband and the 3 grandsons stopped in as I was getting ready to eat. The youngest ( 4 years/old) came over and was looking at my plate so I gave him a bite. Big grin and he ran over to "Mom" saying, Ive got to stay and eat that its to good for grandpa. The oldest was a little more discreet with Know I know where Mom learned to cook.

Couple of questions---Teaspoons or Tablespoons on the salsa? How much is a "touch" of molasses? Bacon chopped and mixed in or layer on top while cooking? Thanks.

I believe they were a soup spoon that was handy. about the same soup spoon of molasses. the bacon was blended thru when it was all mixed. I usually grab what utensild is handy and work by eye cooking. LOL

Everything was in one bowl and mixed with a potato masher.

And also the cold meatloaf sandwich at lunch was even better than supper last night Last 2 slices of the meatloaf about 1' thick slice of sharp cheddar cheese, ketchup and mustard on wheat bread

Country Gent when I read your post last night I went and took some ground beef out of the freezer. Didn't have some of your fixings but I'm trying Ritz crackers. It's almost ready.

They seem to give a little better flavor than saltines or bread crumbs. Mom would use the goose eggs up in meat loaf or egg noodles; But a goose egg is to big for just a 1 pound meat loaf

We all have Covid at my house, so I’m making darn sure to keep my wife and kids fed with high energy food right now.

My question: what temperature do I need to bake it at, and for how long?

Thanks for the great sounding recipe!I usally bake mine at 375 for about 45 minutes. Trying to make sure the interior gets cooked thoroughly.

I like a little slower cook at 350 and about an hour use a meat thermometer with probe and make sure center is up to beefs safe temp.

Meat loaf does sound good some time soon, we haven't had it in a while. I gave in to temptation, the Amish store near us has had 10lb. sacks of frozen ham loaf, ready to bake, just thaw, form, and bake, $28.00 a sack. The wife says she can't make it that cheap. We add a pineapple/brown sugar glaze, bake and chow-down. They used to have ready to bake frozen meat loaf slices in a 4lb. bag that was better than any we could make at home, but alas, they are no more.

Ham loaf? I've never heard of that. 2 100 years ago my wife and I spent a couple of vacations down in Pennsylvania visiting the Amish. But never saw that.

Another little thing that is really good is mash up a couple smokey links in egg salad and substitute tony packos pickle and pepper relish for the pickle relish.

Made the meatloaf exactly to your specs tonight, Country Gent. It was absolutely delicious. Not a scrap left over. Felt like we were eating pure energy, too. Thanks a ton from my family.

Last night fried up some spam and pineapple rings and made a sandwhich with Italian bread. Tonight pork chops with Rice a Roni and some cauliflower. Tomorrow probably finish off the stuffed pork loin with stove top stuffing and some meatballs. Frank

No. It's ground ham trimmings mixed with ground pork and fillers like meatloaf, (no onion or veggies) form it the same bake with brown sugar and pineapple glaze. I guess you could sub ground spam for ham, still need pork and fillers though, (egg, bread crumbs, spices). https://www.allrecipes.com/recipe/21731/ham-loaf-ii/ This recipe is close to the wife's but not exact.

My wife enjoys meatloaf. However,, she has grown to where she refuses to eat anybody else's meatloaf anywhere. Homecooked or restaurant, doesn't matter. She likes mine far & beyond any others.
Mine is a more Italian themed in flavor, and no cheese on any she'll want. I usually put cheese on 1/2 of it.

Take a look at all the ham loaf recipes and pick the one that suits you. We do the brown sugar glaze then top with crushed pineapple.

The only problem I have with meatloaf is choosing which recipe I want, the mushroom soup type or the ketchup variety. Both are good!

My Wife bypasses the hot meatloaf on a plate with potatoes and goes directly to warm sandwich.
I usually wait until next noon for a sandwich.
