My wife is harvesting onions a bit every day as the stalks begin to fall over. We cut the bulbs off, take the stalks when they are still green and chop them into 1/2 inch or so flakes and freeze them for use in Salads, soups and stews, omlets, etc.. They have a flavor between the onion and a garlic; not as strong flavor as the onion bulb, but we try to use all aspects of the plants we grow (such as beet greens).

Went from cold/wet to 100 degrees here and only a few of my onions even came up.
