I just threw away 18 lbs of bacon from last years pig .
I don't have a clue what happened , I used the same everything I've been doing for the last 10 years .
I went to make a blt , it smelled fine cooking and looked good .
But it tasted rancid , opened up 5 random packs and no love from the bacon gods .

It came out of the smoker the weekend before Xmas , it tasted fine then .
I had a some of it back in January to compare with the year before bacon I was finishing up and it tasted fine .

The chops and ham done in the same brine are just fine ... But the bacon is bad .

I have some in the rub right now. Have had it go rancid in the freezer before. I think it's all the fat. Maybe your batch sat too long at a higher temp before it went in the smoker - Hard to know.

Think your sad now ,, imagine going a whole year without bacon .

I had to throw out a picnic ham way back when I first started , I didn't get enough cure injected down by the bone .
But I've never had any bad bacon before ..... A complete tragedy

Was it a boar? Ive butchered a couple boars that tasted that way even though it wasnt rancid. I think its the hormones or something but it was FOUL

Fat is what causes meat to go bad. Not using enough salt will do it.

How was it packaged prior to freezing?
Was it vacuum sealed?
My wife buys several 3# packages of bacon at a time when it goes on sale.
I divide it into 1/2# sections and vacuum seal it.
We have never had it go bad.
It may depend on how it is cured/smoked.

Do you make or buy your cure?Did you leave it lay out after you sliced it but before freezing.If it was me I'd be really trying to fiqure what I did different so it didn't happen again.Maybe your cure is more of a flavoring cure than a curing cure.Meat can spoil in a freezer if you just pile it in it takes a long time for the meat in the middle to freeze.The worst thing for doing funny stuff is ring bologna with cheese commercial seasoning mix.Talked to the manufacturer and a local shop that does tons.We had been using fatty pork trimming with deer meat rings would smoke fine freeze fine when you thawed them out they would be fine but in a couple days would be bad.Rings without cheese would last a long time.Changed to beef trimming last a lot longer but not as long as rings without cheese.

I’ve had this experience and quit butchering male swine weighing over 75lbs or so. “Worms gotta eat. Buzzards too.”

Truly sorry for your loss . . . I'm one of those guys that am not supposed to eat bacon but once in a while I fall off the wagon - a couple times a year and what the cardiologist doesn't know . . . . as I read your tale of woe, I could imagine the aroma of frying bacon . . . imagined the delicious flavor . . . and I'm really craving a BLT.

DO NOT THROW YOUR RANCID BSACON AWAY THOUGH!!! Recycle it - box it up and send it to Nancy Pelosi in care of the New American Democratic Socialist Communist Party . . . they like LOTS AND LOTS OF PORK in their "Progressive" Congressional Bills . . . . don't let that hog die in vain!

Boar bacon... nasty stuff... got a box of pork belly and I took it back it smelled rancid as soon as I opened it... it wasn't spoiled, it was boar belly...

I was so saddened to hear of your loss ... hope you discover the cause and cure .
If you were here we could use it to bait our Crawfish traps ... a good Crawfish Boil along with copious amounts of cold beer might help ease the pain .

The Lord proved he loves us by giving us Bacon , Beer and Crawfish !
It's now officially Crawfish Season here ...the Big Freeze of 2021 slowed it down but ain't stopping it !

I don't drink , but a crawfish boil sure would ease the pain .
Can't even remember the last time I had enough of them to eat my fill

I, too, absolutely love good thick-cut heavy smoked bacon with just about anything....except ice cream~!

But look at the positive side.............think how many potential days/weeks/months you added to your (and others) lifespan by not eating all that horrible animal fat. I know I eat way tooooooo much bacon/animal fat and it will catch up someday.

Eat well, love well, enjoy life................my motto.

Males need to be castrated at a very young age to have decent tasting meat.

As long as you have a good freezer, that gets cold enough and you didn’t have any power outages, bacon should easily keep over a year, if not longer. If it tasted good before, it should of stayed good as long as the temperature stayed cold enough. Are you sure your freezer is working properly?

I've heard that the Wuhan covid 19 does strange things to the sense of smell, tragic man...

On a higher note, Can you imagine bacon wrapped crawfish tails ?

We do bacon wrapped shrimp all the time on the pit, But we have to go covert doing this...It's sad seeing neighbors chewing on the top fence boards

That hurts when you lose meat like that. Like most of us here, my taking an animals life for food renders to me an obligation not to waste it.

However, if it was a boar that the bacon came from, that happened to me as well. It was the circulating (blood) pheromones/hormones that did it, not the freezer or smoker.
I used it for my dogs after that, and they loved it. However, I had to cook it on the grill outside as it just stunk too much to bring indoors.

Here in Florida we often need to cull hogs, and the boars I always use for dog food. I've tried all the tricks: cutting off the genitals as soon as they are on the ground, brining, ice water bath, etc. but I can't get the piss-like smell that happens during cooking to disappear. That said, putting the ribs on the grill the same day as he is shot isn't bad at all, and is still my SOP.

But, I'll give you the same advice my father gave to me as a teenager and dating: Never, ever, ever, EVER have sex with a 16 year old girl. Unless it's an emergency. Same for boar bacon.

There's a decided lack of bears in Ohio ... Plenty of other varmint s but sadly no bears .

Oh well , I'll get another pig in may , and have bacon again before Xmas .
If needs be I'll break down and buy some belly to get me threw
